Cinnamon Rolls

This recipe I tried from http://www.recipezaar.com. You can get the recipe from here and this one come out very well. Here is the recipe reproduced.



Ingredients:


1 cup milk, scalded
1 teaspoon
salt
2 tablespoons sugar
1/4 cup margarine
, melted
2 1/2 teaspoons dry yeast

3 cups all-purpose flour



Filling
2 tablespoons butter
, melted
7 tablespoons sugar

1 teaspoon cinnamon

2 tablespoons butter
, melted

Topping
1 cup icing sugar

3/4 teaspoon vanilla extract
1-2 tablespoon evaporated milk



Method:



Let scalded milk cool until it is between 106 and 114 degrees fahrenheit. Combine 1 cup cooled milk, 1 teaspoons of the sugar, and 2 1/2 teaspoons yeast. Let stand 3 minutes. Stir and let stand 10 minutes more. Add remainder of sugar, margarine, and 1 1/2 cups of the flour. Beat to mix well. Beat in another 1/2 cup of flour. Add as much of the remaining cup of flour that you need, a little at a time. This must be kneaded in, as the dough is too heavy to stir. You might not require all of it. Add the flour and continue kneading until dough is smooth and elastic and doesn't stick to your hands. Put the ball of dough in a bowl that you have greased with a little margarine. Roll the dough ball around the bowl to grease it. Cover loosely with a tea towel and let rise in a warm, draft-free place. This takes about 2 hours.


When it has risen, put on a lightly floured board. Do not beat it down. With a floured rolling pin, roll into a rectangle approximately 1/4" thick and about 12 1/2 inches long. It can be a little longer but don't go below 12 inches-you don't want piddly little buns. With a pastry brush, brush entire surface of dough with 2 tablespoons melted butter. Combine sugar and cinnamon for the filling. Sprinkle over the melted butter. Roll up at long end. Cut roll into 12 slices. Put in a greased 9" X 13" pan with a space between each one-they will expand. Brush with 2 tablespoons melted butter. Cover with a tea towel and let rise for approximately one hour. Remove tea towel. Bake in a preheated 375F oven for 15 minutes. Remove from oven.


Combine topping ingredients, using only 1 tablespoons evaporated milk. Add remaining tablespoons of milk to make a glaze that can be drizzled. Drizzle the topping over the cinnamon rolls with a spoon. Remove from pan

Waffles

Recently I tried the Waffles recipe from Asha's of Aroma and it come out very good. You can view her original post here. Thank you Asha for posting this recipe. Here is her recipe reproduced


Ingredients:

1 Cup Waffle mix (or 1 cup plain flour, 1 tsp Baking Powder, 1/4 tsp salt)
2 tbsp Hershey's Cocoa powder
1 tsp Vanilla essence
1 Egg (optional)
1 tbsp Brown sugar
2-3 tbsp Chocolate chips
Milk

Method:

Mix all the ingredients in a bowl and mix well with enough milk to make a thick pourable batter. Must not be thin. Heat a Belgian Waffle Iron until hot, spray lightly with no-stick oil. Pour a ladleful of batter into each until they are filled. Close the waffle iron and cook until you don't see the steam coming out from the sides of the iron. Open the Waffle iron's lid and lift all of them onto a cooling rack. Repeat the same until all batter is done.


SERVE: with Butter Pecan Maple Syrup and a cold glass of Orange juice.

The variation I did in this recipe is that I did not add eggs to the mix and I served the waffles with whipped cream topped with strawberry and banana slices and pancake syrup and a glass of Fresh Juice Melody .

Banana Fritters Recipe




Banana Fritters Recipe
Ingredients:
Banana -2
All purpose flour-5 table spoon
Sugar -5 table spoon
Baking powder- 1/4 tea spoon
Egg -1
Vanilla essence-1/2 tea spoon
Oil for deep frying
Method:

  • Mash bananas, then add egg and mix well. 
  • Mix in all the rest of the ingredients. 
  • The mixture should be in a form of thick porridge. 
  • Pour a table spoon full of the batter in to hot oil and deep fry till golden brown.
  • Serve hot.

Stir Fried Chicken in Chilli-Oil



Ingredients:
Chicken(boneless)-500 gms
Egg-1
Soya sauce-3 tsp
Corn flour-1 tbsp
Red chillies (dry)-10 nos
Ginger-1/2 tbsp, minced
Garlic-1tbsp, minced
Celeary-3 tbsp, sliced
Vinegar-1 tsp
Ajinomoto-1/2 tsp
Pepper powder-1/2 tsp
Pinch of orange red colour (optional)
Salt to taste
Oil -4 tbsp
Method:
1-Cut the chicken into bite size pieces and marinate with the egg, 2 tsp soya sauce, corn flour, salt and the colour for 2 hours. Cut each chilli in to half and deseed.
2-Heat the 2tbsp oil in a non-stick pan and stir fry the chicken until light brown. Drain and keep aside.
3-Heat another pan with 2 tbsp oil and stir fry the chillies till light brown. This is the chilli oil. Add the garlic, ginger and cleleary, fry for 5 seconds. Then add 1 tsp soya sauce, vineger, pepper and ajinomoto. Mix in the fried chicken pieces and stir well to coat in the chilli oil. Serve hot.

Fresh Juice Melody


Ingredients:

Carrot -1
Apple -1
Orange -1
Lemon -1/2
Sugar -5-6 tbsp
Water -2 1/2 cups

Method:

Extract juice of all fruits and carrot in a juice extractor. Add 2 to 2 1/2 cups of water and sugar and mix well and serve. You can increase or decrease water and sugar according to personal taste. You can even substitute any kind of fruits of your choice.

Palak Thoran (Stirfried Spinach with Coconut)


Ingredients:

Spinach - 1 bunch
Onion - 1 medium
Green chilies- 3-4 nos.
Freshly grated coconut- 1/2cup
Garlic -5 cloves
Cumin Seeds-1/4tsp
Mustard seeds - 1/2tsp
Turmeric powder- a pinch
Oil -1tblsp

Method:

Wash and shred palak (spinach). Ground coarsely, coconut, onion, green chilies, garlic, cumin seeds and turmeric powder Heat oil in a frying pan and fry mustard seeds. Add coarsely ground coconut mixture and fry for one minute and add shredded palak. Keep on stirring on high flame until all ingredients mix well and all the water in it evaporates. Check salt and serve hot as a side dish with boiled rice.
