Rasmallai

Ingredients:

Milk Powder -1 Cup
Baking powder-1 tsp
Egg -1
Milk -1 litre
Sugar to taste
Cardamom
Cashew nuts and Badam, sliced – 1 tbsp


Methd:

Put sugar and sliced nuts in milk and keep it for boiling. Sieve milk powder and baking powder together and put this into egg which is not beaten. Knead it and make about 18 balls with this. Put this balls in the boiling milk till it reaches double the size in medium flame ( about 20-25 minutes). Add cardamom powder and serve either hot or cold.

Dill Chutney


Ingredients:

1 Cup(1/2 bunch) Dill leaves, chopped along with stem
1 Cup Coriander leaves, chopped along with stem
2 green chillies
1 Onion, chopped
1" piece ginger
1 tsp amchoor ( dried mango) powder or lime juice to taste
1/2 tsp salt

Method:

Wash Dill and coriander leaves. Grind all ingredients and serve with Dosa, Kebabs, Tikkas etc

Mixed Dal Dosa


Ingredients:

3/4 cup Pachari / Long grain rice
3 tbsp Boiled rice
1/4 cup Urad dal /Black gram
2 tbsp toor dal
2 tbsp cherupayar parippu / moong dal
1 tsp ulluva / methi/ fenugreek seeds
5 dry red chilies
3/4 tsp Asafoetida powder
Salt to taste
Curry leaves -few

Method:
Wash rice, dals and fenugreek 3 to 4 changes of water or till water is clear. Soak this mixture in a big bowl together for at least 5 hrs. Grind it to a very smooth batter with all other ingredients and keep it overnight.

Heat tava/griddle to smoking hot. Pour a ladleful of batter on the tava and start spreading the batter in circular motion to form a round and thin dosa. Drizzle a tsp of oil/ghee/butter and cook it for about 2 to 3 minutes on a medium hot flame. When the dosa is cooked up to golden colour serve immedietly with any chutney of your choice. I served this dosa with Dill Chutney.

My Cake Decorations


Baking cakes and frosting them for special occasions has been a small sweet tradition that I have followed and I look forward to such occasions like birthdays, anniversary or Christmas. Recently I have seen several posts with photos of cake decoration. So I thought I would add some of my decorations here!!! Please remember I am not a trained cake decorator and have not taken any cake decorating courses. I have learned by trial and error and these are definitely not “the perfect ones", so please do not view these photos from expert’s eyes!!!!

Meat Loaf Recipe




Meat Loaf
Ingredients:
Minced Meat -500 gms
Fresh Bread crumbs -1 cup
Egg -1
Chopped Onion -1/2 cup
Chopped Carrot -1/2 cup
Garlic, chopped -1 clove
Ginger chopped -1tsp
Tomato sauce -1/2 cup
Steak sauce -2 tbsp
Dried Oregano -1 tsp
Dried Basil -1/2 tsp
Pepper powder - to taste
Salt -to taste
Cooking cheese -1/2 cup
*White sauce
Method:
  • Combine all the ingredients except cheese and white sauce in a large bowl, mix well and pack in to a greased loaf pan.
  • Spread white sauce over meat evenly and cover with grated cheese.
  • Bake in a preheated oven (350 degree F or 180 degree C) for 1 hour.
  • Serve loaf with bread rolls or Garlic Bread.
 
*For White Sauce  
Ingredients:
Butter -2 tbsp

All purpose flour/ Maida -2 tbsp
Milk -1 cup
Pepper powder -1/2 tsp
Salt - to taste
Method:
  • Melt butter in a saucepan, stir in flour and cook, stirring, for 30 seconds.
  • Whisk in milk and cook, stirring, over a medium heat for 4-5 minutes or until mixture thickens.
  • Turn off flame and add salt and pepper to taste.
