Sponge Cake



A long time ago a teenager attempted to bake a cake with the help of her mom. That cake came out very soft, spongy and tasty. That was the first attempt in baking a cake for this teenager and it gave her a great deal of confidence. Now that teenager has become a more experienced baker and is confident enough to experiment with more complicated recipes. This cake is from her list of favorites .....yesterday I made this cake again after a very long time and it tasted better than in all previous attempts…. may be because of the memories associated with it…some of my best years that I spent with my mom …I got this recipe from my mom and as October is her birthday month, this one is dedicated to her.





Kerala Sponge Cake / Ghee Cake
(Recipe Source ~Mrs.K.M.Mathew's recipe from Malayala Manorama )
Ingredinents:
Maida / All purpose flour-250gm (2 1/4 cup)
Baking Powder-1 tsp
Baking Soda-1/4 tsp
Butter/Ghee-250gm
Powdered Sugar-250 gm
Eggs-4 no. (separate yolk and white)
Grated Lime/ Lemon Zest-1/2 tsp
Fresh Lime/Lemon Juice-2 tbsp
Milk- 1/2 cup (4 o|z)
Granulated Sugar-2 tbsp
Vanilla Essence-1 tsp

Method:

  • Sift together Maida, baking powder and Baking Soda. 
  • In a large bowl, beat together butter and powdered sugar with an electric mixer on medium speed until light and fluffy. 
  • Add egg yolks one at a time, beating well after each addition. Add lime juice and lime zest and beat 1 minute longer. 
  • With the mixer on low speed, alternately add flour and milk to butter mixture, beginning and ending with flour.
  • In another bowl whisk egg whites stiff, then gradually add 2 tbsp sugar and vanilla essence and continue to beat until stiff. 
  • Fold egg white mixture in to butter mix and mix well.
  • Turn in to a well greased pan and bake in a pre heated oven of 180C for 50-55 minutes, or a cake tester inserted in center comes out clean.

  14. Fantastic recipe. turned out really spongy, I used desi ghee instead of butter, the result was fantastic., However I feel that 250 gms Ghee is a tad too much and recommend that 150 gms should be more that sufficient.
    Otherwise Great...

    Thankyou very much for sharing this sponge cake recipe. Today i have tried this cake. It cameout very tasty and nicely raised . I think lemon gave good taste to the cake. Noone noticed lemon in the cake and all at my home said cake tasting differently with a nice taste. First i got scared to use grated lemon but used and finally good results.

  19. I wanted to make sure that your sponge cake also has sugar being incorporated in the egg white,and I decided to try the recipe .
    It came out very well thanks.

    BTW, this incorporation of sugar and lemon juice can part of most of the cakes? I ahd made the fruit cake too, today and the family loved it.

  32. Hi, Swapna, Nice recipe, I have tried it, don't know how it comes up, in process :). But egg whites did not become stiff. What could be the reason & how long does it take to become stiff? any tip on making it stiff?..............Ashwini

    1. You have to use completely dry vessel,beater etc, even a drop of water there, the egg white will not become stiff, also egg yolks wont come inside white... it will take up to 5 minutes to become stiff... do let me know hoe ur cake turns out...

  34. Hey Swapna... Thanks a lot for this recipe. It was yummy & cake was very spongy & light. Everyone liked it. This is the one I was loooking for a loooong time. There were lots of "comments" I was getting @home previously for my earlier cake.... now everyone was SURPRISED!! :)..............   36. Hi Swapna: Thanks for such a lovely recipe. I tried this yesterday as I have a party at my friend's place. And I must say that this was the best cake ever baked by me. I followed all the steps n the measurements as given... and at the end it was a WOW. Made it at night... and in the morning offered one piece to my mom and there she too loved it... Thanks a lot once again, this recipe goes into my diary book.
