Dates Wine / Khajoor Wine Recipe

Khajoor WineMy mom and my aunt were the best wine makers in our family....and I too have inherited some of their talent ....so far I have experimented with a large variety of wines from different fruits and vegetables.....and most of the experiments were a success .....so here I am sharing with you one such success to celebrate the Christmas season.....Christmas celebrations are simply not complete without Fruit cake and wine....Enjoy this Christmas with Dates Wine!!!!!

Dates Recipea
Ingredients:
Dates-2 kg
White Grape Juice-250 Grams
Citric Acid-25 Grams
Sugar-1 kg
Water, boiled and cooled-4 liters
Yeast-1 table spoon


Cooking with dates
Method:
  • Sterilize all equipment before use.
  • Chop then boil the dates gently for 1/2 hour with 2 litres of water.
  • When cool, strain in a bharani/ bottle and add in the grape juice concentrate. Add the citric acid, yeast and top up the water to around 4.5 liters with cool water. Keep the bottle air tight.
  • Wait until fermentation is compete, for 21 days. Stir this mixture every day with a wooden spoon. Strain this mixture using a cheese cloth or muslin cloth, into a clean dry vessel on 21st day and leave to clear.
  • Rack into clean bottles when completely clear and stable. Store for up to 2 years.

Wonderful Swapna, wot a wine--hic! :D The bottle looks elegant, so does the cloth ...wine...yummmmmm..u used the spera/ eva brand of white grape juice or some other product? where do we get citric acid here? The pics are absolutely stunning..n yes..going by the looks I dont think u hv to store it! :D It will b gulped down instantly!

    1)what kind of yeast u used and did u add it directly to the mixture?

    I think 1teaspoon Citric Acid is equivalent to the juice of one Lemon.. so in this recipe you need 25gms(almost 6tsps) citric acid.. so you need juice of 6 lemons....hope it will work...

  21. Gr8888, Tried Nellikka wine. Without yeast, it was good.
    I have a doubt in method. Could you please elaborate

    1. You have to stir the mixture everyday during the first 21 days not after 21 days.

    1. Hi Mandeep, Bharani is an earthen pot we use in Kerala.... you can use big glass bottle to make wine... Please do a google search to see Bharani picture:)

I've never made any fermented drink before, so I have no idea— how long does it take to clear? Is that a process of minutes or hours or days? How soon is the wine ready? On the 21st day, or is it longer?

In this instruction I have two doubts: 1) can I use active dry yeast? 2) have we to add additional 4.5 liters of water to the strained mixture or is it the total volume of strained mixture and grape juice and addition of more water supposed to be equal to 4.5L ? I HOPE YOU WILL REPLY SOON, I WANT TO TRY THIS !

    1. 1-Yes you can use dry yeast.
      2-Only two litres of water is using to boil the dates out of 4 litre water I have mentioned in the ingredient list. So after straining the dates you have to add the rest of the water.
