Lemon Sorbet with Mint Leaves

I saw this sorbet recipe in an Australian Women’s Magazine on a recent visit to my favorite book shop here…. It was really a bliss having this when the outside temperature is 50°C….. 


Lemon Sorbet with Mint Leaves
Ingredients:
Freshly squeezed Lemon Juice-2 cups
Sugar-3 cups
Water- 1 cup
Cream – ½ cup
Mints leaves-2 tbsp, chopped



Method:
  • Combine water and sugar and bring to a boil over medium heat. Reduce heat to low and simmer until sugar dissolves, about 3-4 minutes. Cool completely.
  • Put sugar syrup, lime juice and cream in a blender and blend well.
  • Chill for an hour and blend the mixture again. Repeat this process two more time and finally add mint leaves and freeze the sorbet in an air tight container.
  • Serve chilled.



The life of a Lemon sorbet is short as the outside temperature climbs to 50°C :)
