Chicken with Green Chillies


Is there anyone who doesn’t like Chinese dishes? Well I don’t think so.... I make a lot of Chinese chicken dishes and this one is a hit in my family.... My picky eater son loves this curry and he will eat this with noodles or chapathi happily.... only thing he will pick up and keep aside all the veggies I add and eat only the chicken pieces :D.... This recipe is from a book “My favourite Recipes Chinese” by Mrs. Bhanu Ravindran which my mom gifted me when she visited me after my wedding.... This has some of the best Chinese recipes and I have, over the years, tried almost all of them! This curry goes well with fried Rice, Noodles and even with chapathi......



Chicken with Green Chillies
Preparation time - 45 mins
Cooking time - 20 mins
Serves- 3

Ingredients:
500 gms boneless chicken
1 tbsp Soya sauce
1 tsp salt + pinch of ajinomoto (optional)
1 egg white
10 fresh green chillies
1 tbsp garlic chopped
3 tbsp spring onions chopped
1/2 tbsp ginger minced
3 + 2 tbsp oil

For the Seasoning:
1 tbsp soya sauce
2 tbsp stock
1 tbsp corn flour
1 tbsp vinegar
1/2 tbsp roasted sesame power (optional)
1/2 tsp ajinomoto
1/2 tsp pepper power
1 tbsp tomato ketchup
Salt to taste

Method:
  • Dice the chicken and marinate in 1 tbsp soya sauce, 1/2 tsp salt, pinch of ajinomoto and 1 egg white for 1/2 an hour. Slit the chillies lengthwise and then into half-inch lengths. Discard seeds. Mix all the seasoning in a bowl.
  • Heat 3 tbsp oil, stir fry the chicken pieces until the colour changes to white. Remove and drain.
  • Heat 2 tbsp oil stir fry the green chillies, ginger and garlic until fragrant. Then add the chicken, spring onions and the seasoning mixture. Stir fry for 2 mints. Serve hot.
Note: You can add cubed onion, capsicum, thinly sliced carrots or celeary sticks to this curry. If you are adding any of these vegetables add along with ginger & garlic and sauté it.

  1. Talk about that book, Chechy!! ALL of my family members have it. My Grandmother is the reason behind it. Back in those days, this book was sold door to door by a salesman. Pinne aanu book shelves-il ethiyathu.I have Amma's copy with me here.
