Mom used to make this
simple snack for us while we were kids… She used to make Savory Orotti (Flat
Rice Bread) too with the same recipe. While Ari Vada needs deep-frying, Orotti
is made on a skillet. You have to adjust the amount of water according to
the rice flour you use. Also if you are making this vada for small kids reduce
green chillies or completely omit it. We used to have this with ketchup…..You
can even serve with Coconut Chutney.
Ari Vada Recipe / Deep Fried Savory
Rice flour Fritters
Preparation time – 10 mints
Cooking time – 5-10 mints
Serves – 2-3
Ingredients:
Rice flour (roasted) -1
cup
Grated coconut – ½ cup
Onion - 1, finely chopped
Ginger – 1 tsp, finely
chopped
Green chillies – 2-3,
finely chopped (adjust according to your tolerance level)
Curry leaves – few
Salt to taste
Boiling water- ¾ cup or as
needed
Oil for deep frying
Method:
- In a bowl, mix rice flour with all the ingredients except water and mix well with a spoon. To this add boiling water and mix well with a spoon. When cool enough to handle, knead the dough to a smooth and soft dough.
- Heat oil to deep fry.
- Wet your palm and take small amount of dough and make a lime size ball, gently flatten it with your wet fingers and make a hole in the middle.
- Deep fry these shaped dough in medium heat oil until light golden brown on both sides.
- Serve hot with ketchup and hot coffee or tea.
