Recently
when I found good dark colored beetroot I bought some to make wine and squash . Mom used to make this wine very often; it’s very
easy, does not require daily stirring and will be ready to drink in 14 days J…. If you have not tasted
beetroot wine believe me it’s very tasty and resembles grape
wine in color and taste…. Try to get dark colored beetroot for this wine…. Immediately after making, the wine will be
very dark in color and will become clear and transparent with aging…

Beetroot
Wine Recipe
(Recipe Source- My Mom)
Preparation time – 20 mints
Cooking time – 25 mints
Ready to use – in 14 days
Ingredients:
Beetroot
– 2 ½ Kg, grated
Sugar - 2 Kg
Water -5 liter
Yeast - 1 teaspoon
Lime
juice- from 4 limes
Method:
- Wash beetroot, peel off the skin and grate using a grater or food processer.
- In a big vessel add grated beetroot along with water and boil.
- Reduce the heat to medium and boil for 10-15 mints.
- Turn off the heat and let it to cool to lukewarm.
- Strain the boiled beetroot water using a strainer or cheese cloth into a bharani (earthen pot) or glass bottle and discard the grated beetroot.
- In a small bowl take ½ cup lukewarm water, sprinkle yeast and 1 tsp sugar, mix and leave to rise.
- Add the yeast mixture, sugar and lime juice to the strained lukewarm beetroot water in the bottle and mix well until the sugar dissolves.
- Once the mixture is cooled completely close the bottle with the lid and keep aside for 14 days untouched.
- After that strain the mixture again; bottle and use.

ReplyDeleteI've been making beetroot wine quite often now but we had to go out of town urgently recently and when we returned I found the beetroot wine had formed a kind of skin on top plus some mold. What shall I do? It seems as if the strained wine is not alcoholic too.

DeleteIf mold is not much remove / strain the wine and add 1/4 to 1/2 cup of brandy or rum to the wine. Again wash, sterilize and dry the bottle and pour wine and see if mold coming back again. If it's coming back I am sorry you have to throw :(...

I am making lots of wine, this year. Apple, pear, blackberry and, now, having a go at this beetroot wine. Fingers crossed it will be a good one for Christmas.

DeleteThanks for trying the recipe and glad to hear you liked the wine. You have to strain the clear wine again preferably through a cheese cloth once the sediments settled well without mixing the settled sediments. I never used anything like charcoal or carbon.

It shouldn't be airtight. If you are using a bharani, use a clean nice cloth on top of the lid and tie it with a thread.

DeleteI use Baker's yeast as Brewers yeast is not available here. If you find brewers yeast in your area you can add that.

DeleteHi Swapna, I prepared the wine according to your recipe. I used active dried yeast and now it's been 10 days and the wine is fermenting well I guess as I see Bubbles rising to the top. Out of curiosity I had a taste of the wine and it tastes moderately sour but I can't taste the sweetness. It smells fermented. Do I add more sugar?

ReplyDeleteThere will be a colour change to wine with aging and it will become crystal clear. If you keep the wine in dark bottles you can prevent it for some extent

ReplyDeleteI made it. It came out nice. I opened it after 21 days the only problem i feel is its more sweet n less sour. Do i need to ferment it for another week? It is way sweeter than regular indian wines. Otherwise everything is good.

ReplyDeleteSweetness will reduce with aging. Any new wine will taste sweet, better keep it for a month or two after straining and you will see the difference.

This recipe is easy because you discard the pulp in the beginning itself. Is there no need to stir the wine daily or every other day? Please let me know.
