It’s been a couple of weeks since I have updated this space…. I was busy
with shifting our apartment and settling down in the
new home… Still I have a lot to unpack and I am only cooking some basic stuff
just to survive ;)… Today just to relax, I thought of posting this easy one bowl chocolate date cake
recipe that I made recently… The
batter is completely prepared in a saucepan, and that means you only need to
wash up one bowl!.... Dates add moistness to this dark, fudgy cake…. and this cake
goes very well with vanilla ice cream or whipped cream…. A great dessert for a
party with little effort :)…
Chocolate Date Cake
(Recipe Source~ 365 Great Cakes and Pies)
Prep~15 mints
Bake~ 30 to 35 mints
Serves ~ 12
Ingredients:
1 cup whole pitted dates, coarsely chopped.
1 stick (4 ounces) butter, cut up
1 cup sugar
1 tsp baking soda
1 large egg, lightly beaten
1 tsp vanilla extract
11/2 cups flour
1/4 cup unsweetened cocoa powder
1/2 tsp salt
1/2 cup chopped walnuts
Whipped cream or vanilla ice cream
Method:
- Preheat oven to 350°F / 180°C. In a medium saucepan, bring dates and 1 cup water to a boil over medium heat. Remove from heat. Add butter and sugar and stir until sugar is dissolved and butter is melted, 2 to 3 minutes. Stir in baking soda until dissolved. Blend in egg and vanilla.
- Sift together flour, Cocoa powder and salt. Stir in to date mixture along with 1/2 cup chocolate chips and the walnuts. Turn into a well-greased 13 x 9inch baking pan. Sprinkle remaining 1/2 cup chocolate chips over top.
- Bake 30 to 35 minutes, or until a cake tester inserted in center of cake comes out barely clean. Let cool completely on a wire rack and serve with whipped cream or ice cream.
