I always keep a bottle of barbecue sauce in my kitchen and I
add a little when I make chicken for pizza topping or in sandwiches or while
grilling chicken, fish etc. I used to
make homemade Tomato Sauce when tomatoes are in season … When I saw this
Barbecue recipe in a burger book, I tried it and it came out really good. It is
easy to make but a little time consuming and definitely healthier than the
store bought ones as it does not contain any preservatives … Here is how I made
Spicy Barbecue Sauce…
Spicy Barbecue Sauce

Preparation time: 35 mints
Total Cooking time: 1 ½ to 2 hours
Makes about 7 cups
Ingredients:
2 large Red Capsicum, seeds and membrane removed, roughly
chopped
2kg Ripe Tomatoes, roughly chopped
3 medium Onions, finely chopped
3 sticks Celery, finely chopped
2 ½ cups Vinegar
2 Red Chillies, finely chopped
3 cloves Garlic-, crushed
2 tsp grated Fresh Ginger
1 tbsp fresh coriander leaves, shredded
1 tsp ground Cumin
1 tsp mixed spice
2 tsp cracked black pepper
1 tsp hot English Mustard
2 tbsp paprika
1 tsp Tabasco
1 ½ cups soft brown sugar
Method:
- Combine capsicum, tomato, onion, celery, vinegar, chillies, garlic, ginger, coriander, cumin, spice, pepper, mustard, paprika and Tabasco in a large heavy-based pan. Bring to the boil, stirring occasionally over medium heat. Reduce heat and simmer uncovered for 1 hour.
- Cool for about 30 minutes, pour into food processor or mixy and puree. Return mixture to pan. Add sugar and stir over low heat until sugar is dissolved. Simmer for 30 minutes or until mixture is thick enough to coat the back of a spoon.
- Pour mixture into hot sterilized jars; seal immediately. Leave 2 days before using.
