Lemon Meringue Pie Recipe

I am re-posting one of the recipes from my initial days of blogging. This was our 2015 New Year day dessert and I thought of changing the old pictures with new ones. This Lemon Meringue Pie is a very easy to make delicious dessert with easily available ingredients... A perfect dessert to include in a party menu!

How to make Lemon Meringue Pie

Lemon Meringue Pie
Ingredients:
Marie Biscuit (powdered) - 2 ½ cups or 200 gms
Butter - 4 oz
Condensed milk -1 tin
Egg- 2 nos.
Lemon / Lime Juice - ¼ cup
Sugar- ⅓ cup
Lemon / Lime rind - ½ tsp

Method:

  • Mix melted butter and powered biscuit. Line a pie dish with this mixture and keep it in the fridge for 10 minutes..
  • Beat condensed milk and egg yolk well. Add lemon / lime juice and lemon / lime rind and beat again.
  • Pour this mixture over the biscuit layer and keep it in the fridge again.
  • Whisk egg whites till stiff, adding sugar. Spread this meringue on top of the pudding and cook in a cool oven (160° C) for ten minutes or till light brown.

  8. Swapna, thks for this lovely n simple recipe! (Now Kriti's turn -temperature! Hence late feedback) We totally loved this LMP n kids had it thinking its pudding frm store..:D LOL...but honestly..it was different to taste n filling too!
